I LOVE WAFFLES.. i have just made the yummiest spicey clove waffles. with my kelly friendly flour and kelly friendly sugar substitutes.. with all my disfunction, I can still eat waffles

a little butter, eggs, gluten free flour (tapioca and rice flour) a sweetener called agave (dirived from cactus), clove spice, lactose free milk in them... Topped with a little butter and more agave.

I have food intolerences that cause my mood disorders. If I eat stuff with normal flour, My body stops processing nutrients (it's kinda like an allergic reaction) which in turn increses my axiety level and I become very depressed. I am lactose intolerant (oh the pain) and hypo glycemic... which means very little dairy and no sugar. I am not really good about the sugar thing though.

Fruit surgar is ok if I am not just eating it alone. For example... If I hadn't eaten in a while and then I eat an apple, I crash. If I had that apple with peanut butter (peanut butter you get with out the sugar and perservatives) I would be just fine. I have to eat a high protien diet.

We have dairy problems in my family, so I grew up on powdered soy milk. Mmmmm, gritty.

I've got the lactoss intolerance thing too. Is annoying...I have to admit, while I use both, Rice Dream is so much tastier than soy! Ya! My big frustration is pudding though. I haven't found anything that will make it congeal. Looks like its milk or bust. How rude.

Yer waffles sound damn yummy though. Mmmm.

*chuckles* This reminds me of a time I tried to make cheese melts with a soy cheese... The cheese, it just didn't melt. It came out like wood chips.

Lol, yesh...funny how those things that are supposed to be substitutes sometimes just don't react the same as the originals. You should have seen me with my soy "pudding"...eventually I gave up and put it in the freezer. Ended up with Vanilla Soy Ice Stuff. It was ok--but certainly didn't do much for my pudding and Nilla Waffers craving :P

Fem: The Lactaid stuff is good for cooking. The process of the milk breaks the lactose down. So its a little sweeter than regular milk but still acts like dairy... Personnally I cannot handle soy in anything other than chai. I got burnt out on rice dream.
